This is the fastest way I know to have a dish for that office party or when you just have no time. And it’s easy, fast, naturally sweet and you can whip this up anytime you want a healthy snack to keep around to maintain your weight…- can’t beat that combination.
There are hundreds of variations to ambrosia fruit salad. I’ve seen recipes ranging from a custard, pie, yogurt and with one type of fruit only like apples or berries. The recipe here is my version, but feel free to modify it to fit your own tastes.
Dani’s Tropical Ambrosia Fruit Salad
Ingredients
* 1 (8 ounce) can fruit cocktail, light syrup drained
* 2 1/2 cups shredded coconut
* 1/2 cup chopped walnuts,
* 1 (8oz) can fruit salad, in pear juice
* 1 (8oz) can pineapple chunks, drained
* 1 (11oz) can mandarin oranges, drained
* 2 cups miniature marshmallows (optional)
* 1/4 cup maraschino cherries, drained (optional)
* 1/2 teaspoon ground nutmeg
* 1/2 teaspoon ground cinnamon
* 1/2 cup cubbed banana, add just before serving(optional)
* 1 cup cubbed mango
* 1 cup cubbed papaya
Directions:
1. Drain canned fruit.
2. Combine 1/4 cup of juice from oranges and fruit salad
3. Mix coconut, nuts, canned fruits, marshmallow, nutmeg and cinnamon in large bowl.
4. Slowly pour saved fruit juices into mixture and stir gently.
5. Cover and refrigerate for 45 minutes. Covered you can leave
refrigerated overnight. Makes about 12 one cup servings.
Total prep time: Roughly 10 minutes.
If you choose to add bananas, do not peel until right before you serve as they do turn brown quickly. Add a couple teaspoons of the cherry juice for that festive red color and you’re done.
